This caramel recipe is easy and so good for you. It has the nutty caramel flavor and the beautiful brown color. You will wonder why you ever made sugar filled caramel.

Yield:2 cups
Ingredients
1 can coconut cream (coconut milk works as well)
16 oz bag of pitted dates
2 tsp vanilla
2 tsp cinnamon
1 tsp salt
Instructions
In a saucepan, place date and fill with water until dates are covered. Bring to a boil.
In a wide mouth jar or blender, whip coconut cream until smooth. Add vanilla, cinnamon, and salt.
Pour small amounts of the water your dates were boiling into the coconut cream mixture until the consistency you would like (I do about 1/4 -1/2 Cup).
Strain dates and add them to the coconut cream mixer, blend. (I use an immersion blender.)
Serve warm or put in fridge and let it get even thicker. Enjoy!
