One-Pan Creamy Tomato Pasta

If you need a new go-to dinner, let this be it! Super easy and only takes 15 minutes of hands-on time.

  • Yield: 6 servings

Ingredients

  • 4-6 medium-sized tomatoes
  • 1 block cream cheese
  • pasta of your choice
  • 1 medium onion
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp red pepper flakes
  • 1 tsp pepper
  • 1 1/2 tsp salt
  • 1 tsp italian seasoning
  • olive oil

Optional add-in:

  • mushrooms
  • meat of your choice
  • zucchini
  • bell peppers
  • jalepenios
  • etc.

Instructions

  • Preheat oven to 425°F.
  • Prep the pan:
    • In a medium to large baking dish place the block of cream cheese in the center.
    • Dice tomatoes and onion and add to a baking dish around cream cheese block.
    • Drizzle everything with olive oil
  • Season:
    Sprinkle all spices evenly over the top.
  • Roast (key step):
    Bake for 25–30 minutes, until the tomatoes are soft and the cream cheese is slightly browned on top.
  • Cook pasta:
    While that’s baking, cook your pasta until al dente. Reserve 1 cup pasta water.
  • Mix it together:
    • Remove baking dish from oven.
    • Mash tomatoes and cream cheese together into a sauce and add pasta water until the desired consistency.
    • Stir in cooked pasta. (If you want to add meat, this is when you would do it!)

 

  • Optional bake finish:
    • Top with parmesan or mozzarella
    • Bake another 10–15 minutes for a golden top

Notes

  • Use ripe tomatoes → way more flavor
  • Add fresh garlic if you have it (huge upgrade over powder)
  • A squeeze of lemon juice at the end brightens everything

 

  • If it feels too thick → add more pasta water, not milk
